This beautifully versatile mixture, with all the herby, savoury flavour of a (vegetarian) sausage roll filling, is my go-to recipe for soft finger food bites, burgers or a gorgeous loaf as the centrepiece of an easy-to-eat roast dinner.
There's nothing but goodness in this recipe; lots of nutritious whole foods and a trio of pack-a-punch flavour boosters in the tomato paste, soy sauce and dried herbs. Together, they magically form the most delicious combination that I assure you is absolutely like the flavour and texture of the filling of a sausage roll. For any doubters out there, please be convinced by my dad, Rich: he honestly thinks meat five times a day is reasonable, but he adores this recipe. I don't remember the last time he made a true sausage roll, he's a convert to the way of the oat.
Whichever way you decide to shape and bake, this recipe is particularly lovely served with spicy tomato chutney or, for the roast, with mashed potato and a gorgeous gravy – you’ll find recipes for both in Scrumptious.
I do use a food processor for this, but you could certainly grate then chop the vegetables, finely chop the nuts and use quick oats for the same result.
Like all EES recipes, this one is deliciously easy-to-eat for anyone who needs soft food for dysphagia or any reason. As always, make sure you check the texture before serving and remember that the centre portion of the loaf will be the softest.
