A rich and warming one-bowl-one-spoon meal (my husband Russ’s favourite kind), this Cottage Pie is perfect for a needy moment, especially because it freezes and reheats so beautifully.
I have so many happy memories of eating Cottage Pie at my Didi and Grandad’s house. Piled with golden, buttery mashed potatoes and served with boiled peas, fresh from their pods. (Now I think of it, I’m not sure why it’s such a lovingly nostalgic recipe for me. Didi had such a heavy hand with the salt that our poor wee throats felt burnt, in the same way that you feel after being dumped by a wave at the beach. Harsh and rasping. Look, I can’t explain it, but the love is still there!)
I reckon there’s enough veg in the mince to make it a complete meal but increase the amounts if you like. You could replace the beef with lamb mince if you’d prefer to make a Shepherd’s Pie; in my family at least, that was the only difference!
